Tis the season for pumpkin! Chef Aaron goes beyond what's basic this season with his famous pumpkin soup. This quick and easy recipe using fall's most popular ingredient is sure to be a hit with friends and family!
- 3 pounds pumpkin, peeled and large diced
- 8 oz. heavy cream
- 1/4 cup sugar
Place the peeled and diced pumpkin in large sauce pot. Add just enough water to come up to about an inch under the pumpkin. Add the sugar and some salt. Bring this to a boil and simmer for 15 minutes. Blend soup in batches using just enough of the liquid for blender to run properly. Once soup is blended finish it with the cream and taste for salt. Garnish each bowl with some crouton and grated Jarlsberg cheese.
